Hi, all! My name is Meaghan and I blog over at Cook. Craft. Love. where I adore sharing simple recipes for the busy family, crazy easy crafts, and fun free printables. I am so excited to be with you here today sharing a simple baked breakfast that can be made ahead of time for busy mornings.

It can be especially hard to get back into the swing of things when school starts up and you are struggling with waking up to an alarm clock again. Or, more importantly, waking the kids up to an alarm clock. Sometimes you really need a quick and easy breakfast you can throw together without having to resort to a pre−packaged pastry or sugary cereal.

These baked ham and egg cups come together in just 20 minutes and are a great source of filling protein to get the kids ready for a day of learning and keep them nice and satisfied until lunch. Make these ahead of time on the weekends or pop them in the oven while the coffee is brewing for a quick and delicious breakfast.

These would also be a perfect addition to your next Sunday brunch! Customize the eggs however you want with your favorite omelette fixings. I used potatoes and cheese in these but some other options for you to try could be salsa, bacon, green peppers, mushrooms, spinach, or even asparagus. The sky is the limit with these!

These were kidtested and mom approved! Just a few tips for ya. Err on the side of thicker rather than thinner when it comes to yourham slices and be careful not to let it break while you are pushing it into the muffin tin. Otherwise your egg will seep through and stick to the bottom of the tin. Not fun.
